Ingredients:
For the Crust:
- 2 cups graham cracker crumbs
- ¼ cup brown sugar
- ½ tsp cinnamon
- ½ cup melted butter
For the Cheesecake Filling:
- 24 oz cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 2 tsp vanilla extract
- ½ cup sour cream
- ¼ tsp salt
For the Peach Cobbler Topping:
- 3 cups fresh or canned peaches, sliced
- ½ cup brown sugar
- 1 tbsp cornstarch
- 1 tsp cinnamon
- ½ tsp nutmeg
- ½ tsp vanilla extract
- 2 tbsp butter
For the Lattice Crust:
- 1 store-bought pie crust (or homemade)
- 1 tbsp melted butter
- 1 tbsp sugar + cinnamon mix (for dusting)
Instructions:
1. Make the Crust:
- Preheat oven to 325°F (163°C).
- Mix graham cracker crumbs, brown sugar, cinnamon, and melted butter until combined.
- Press into a 9-inch springform pan and bake for 8 minutes. Let cool.
2. Prepare the Cheesecake Filling:
- Beat cream cheese and sugar until smooth.
- Add eggs, one at a time, mixing until just combined.
- Mix in vanilla, sour cream, and salt.
- Pour over the crust and smooth the top.
3. Bake the Cheesecake:
- Wrap the pan in foil and place in a water bath.
- Bake for 50-55 minutes, then turn off the oven and let it sit inside for 1 hour.
- Chill for at least 4 hours or overnight.
4. Make the Peach Cobbler Topping:
