Keto Cloud Bread Recipe (Oopsie Bread)
Ingredients:
3 large eggs
3 oz cream cheese (softened)
1/4 teaspoon baking powder
A pinch of salt (optional, for taste)
Instructions:
Preheat Oven: Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper.
Separate Eggs: Carefully separate the egg yolks from the egg whites, placing the yolks in one bowl and the whites in another.
Whip the Egg Whites: Using an electric mixer, beat the egg whites and a pinch of salt (if using) until stiff peaks form. This usually takes about 3-4 minutes.
Mix Egg Yolks and Cream Cheese: In a separate bowl, whisk together the egg yolks, softened cream cheese, and baking powder until smooth. You can use a hand mixer or a whisk.
Fold the Mixture: Gently fold the whipped egg whites into the cream cheese and egg yolk mixture. Do this slowly and carefully to preserve the airy texture of the egg whites.
Form the Bread: Spoon the mixture onto the prepared baking sheet. You can form 6 to 8 small rounds (depending on how big you want your bread pieces). Try to keep them about 1/2 inch thick for a light, fluffy texture.
Bake: Bake for 25-30 minutes, or until the cloud bread is golden and firm to the touch. Keep an eye on them near the end so they don’t over-brown.
